Piquin chillies are tiny, red, Mexican chillies which bring a fiery heat to dishes. One of the smallest chillies, piquin chillies are less than one inch long - but are around twenty times hotter than jalapeño measuring 100,000 to 140,000 on the Scoville Scale of chilli heat.
Piquin chillies have a citrus spiciness, and bitter chocolate notes. They add heat and depth to tomato sauces and red meat marinades - their size and strength also make them a good ingredient for infusing oils and vinegars.
Toast briefly in a hot pan to release flavour before using.
